Spelt & Muesli Scones

We tried a healthier version of scones for our country house brunch. The result was a success! Scones are great because they are quick to make and they taste good together with just about everything. We had some sugar free marmalade, plain butter and cheese. Soon we will try to make our own sugar free marmalade, we’ll replace the sugar with some kind of fruit juice. Right now were looking for a good recipe for this. If anyone has any tips, just write us or give us a comment.

Spelt & Muesli Scones
Makes 4 large scones

2 1/2 cup spelt flour
1 cup muesli
3 tsp baking powder
1/2 tsp salt
100 g butter (in pieces)
1 cup swedish
filmjölk (sour milk or butter milk)

Preheat the oven to 250°C. Line a baking sheet with parchment paper. Whisk the spelt with the muesli, baking powder and salt in a bowl. Stir in the butter and the “filmjölk” until it all comes together. Form 4 buns (about 10-12 cm wide) with your hands and put them on the baking sheet. Bake the scones for 15 minutes or until golden. Serve with butter, cheese and sugar free marmalade.

I just bought my first bag of spelt flour, and I am excited to give these a try! Your blueberry spelt cake also looks grand, too!

I have to tell you that I am making these scones once a week at least. They are the best scones I’ve ever eaten. They go with any cheese and marmelade just exeptional. Thank you so much for the recipe.

I am trying to not eat so much animal fat (I have high cholesterol which seems to go down to manageable if I stay away from cheese (which I LOVE) and butter. I am wondering if you have tried these with solid coconut oil.

Should the butter be melted when one stir it in?
    Looking forward to try:)

Hello! I love your recipes! I have tried a few already and it has been always a great success! I am on to the scones now, my only question is about the cups, is it US our UK cups?
Thank you and keep this great work!

These scones look good, too, but I am missing the spelt & nettle scones that used to be in your app. I loved to make these scones for my family on the weekends. Thanks, Annika

      Hi Annika,
Those scones are still in the app. If you are having trouble finding the recipe, try clicking on the search icon (the magnifying glass) and then type scones. Also, make sure you don’t have the gluten-free filter switched on in the settings.
